Skillet Lasagna

INGREDIENTS

    • 1 lb meat loaf mix
    • 8 curly lasagna noodles, broken into 2-in. pieces
    • 1 jar (26 oz) marinara sauce
    • 2 cups water
    • 1 cup shredded Italian cheese blend
    • 3/4 cup part-skim ricotta

PREPARATION

    1. Cook meat loaf mix in a large nonstick skillet over medium-high heat, stirring often to break up meat, 4 to 5 minutes, or until browned. Drain off fat. Stir in noodles, sauce and water; bring to a boil. Cover; reduce heat and simmer, stirring often, 18 minutes or until noodles are tender.


    2. Remove from heat; stir in 1/2 cup shredded cheese. Spoon ricotta on top; add remaining shredded cheese.Cover 3 minutes to melt cheese.

meatloaf mix

Meat loaf mix is a mixture of ground beef, pork and veal, found where the ground beef is in the grocery store.

Meatloaf Mix

This is for Steph regarding the meatloaf mix. I have been able to find a meat mixture called meatloaf in Mexican stores. I have not looked in the major grocery stores, but they probably have it. It is a combination of ground beef, ground pork and seasonings. I believe they may also have bread crumbs in the mixture. I have never bought it since I can't stand meatloaf and don't eat much beef.

I know the kind that comes in a packet but there's an actual meat combination sold as "meat loaf mix"? Hm.

To give it a bit more zip, I often use hot sausage or a combo of sausage and ground beef.
From start to finish it really is a 30 min. meal - An easy one-pan meal and very tasty. Try for yourself
